Manzanilla Alegria is made of 100% Palomino and is produced using the first gravity pressing of the grapes. It is then transported to the seaside town of Sanlucar de Barrameda for ageing. It is biologically aged under Flor, a naturally occurring layer of yeast for over 5 years in the micro climate of Sanlucar. (The same as with Fino). Pale straw in colour, with bright golden undertones. Pungent yeasty aroma with salty notes. Very dry and light on the palate with a salty tang.
