Varieties
Syrah (70%) and Tempranillo (30%)

Terroir
The Syrah is from 15 year old vines, grown at 430m in a sheltered valley south of Corbera D’Ebre. The Tempranillo vines are 25 years old, grown at 400m in the Mas de Cabrera vineyards in Gandesa. Soils in both locations are rich in limestone with very little organic matter. All vines are dry farmed. After an unusually hot dry summer, the grapes were picked on the 16th and 19th of September respectively.

Production
The grapes were harvested by hand then chilled overnight before destemming and undergoing a 5 day cold-soak. Fermentation was carried out in stainless steel at up to 22°C with regular punch- downs. The wine then underwent malolactic fermentation and maturation in third generation oak barrels for a period of 6 months.

– Alcohol content: 14%
– Total acidity: 5 g/l as Tartaric
– Volatile acidity: 0.48 g/l
– Residual sugar: 0.25 g/l

Tasting Notes
The nose is full of black fruits and plums with a hint of violet. The palate is again dominated by black fruits with darker overtones combining coffee and cedar notes rounding into a warm spicy finish.

Food Pairing
Barbecue foods especially sausages and gourmet burgers, pasta dishes with rich tomato or spicy sauces, hearty stews and casseroles of beef or lamb.

Serving Suggestions
The wine is ideally served at 16-18°C, but can also be served slightly chilled. When young it is best splashed into a decanter an hour before serving.
